One more day of work to go this week ..... I am soooo looking forward to the weekend! Friday we are putting in our new floors and I am sooooo excited! We bought everything yesterday, and got a better deal than we expected. Gotta love Costco and their coupons. We are going to do the installation ourselves (I don't know how much I will do, but Rudy's dad is going to come help him), so hopefully that will go smoothly and we can get it all done in one day. That's pretty much the excitement in this house this week. I can't wait for it to be done!
Work is draining me to the last drop. Have I mentioned how much I could use a vacation? I just have to keep reminding myself that I am lucky to have a job in these times, and one that pays well at that. I wish I could just not work, but then again doesn't everyone wish that? At this point in my life that is just not realistic. And you gotta do what you gotta do to get by and pay the bills. So work I will. But maybe someday I won't have to. I can hope, right?
I chose some new recipes to try out this week. I made Old-Fashioned Beef Stew. It was alright, but not my favorite thing. Tonight we had Lemon-Pepper Sole and White Corn Polenta. YUM! I love polenta, but have never been good at cooking it. I got this recipe from a Canyon Ranch cookbook and I will definitely use it again! Only next time I will double it, because it didn't make very much and left us wanting more. Tomorrow I am making Creamy Carrot Soup- another Canyon Ranch favorite, but haven't made it myself before. Saturday I am making Pineapple-Coconut Chicken Stir-Fry for our Valentine's Day dinner. We are not going to do anything special ... Rudy has to work and then we might rent a movie or something. Hopefully we will be enjoying our new floor. :) Our wedding anniversary is coming up so we will probably do something special for that.
